Cameron House Hosts Fine Dining Experience To Inspire Scotland’s Next Generation Of Chefs

Scottish five-star resort, Cameron House was thrilled to collaborate with City of Glasgow College this week and invited 55 budding chefs to an exclusive four-course gastronomic lunch at The Boat House, Loch Lomond.

The culinary experience was hosted by resort chefs Robert McCulloch, Senior Head Chef at Cameron House resort, Steven Smith, head chef at The Boat House, Gemma Arnott, head chef at the Clubhouse at Cameron restaurant and resort sommelier Laurent Warnault.

To kick off the gastronomic celebration, guests were welcomed with a champagne reception before they began the exquisite food and wine pairing menu. To start; a pressed smoked ham hough chicken and foie gras dish was paired with a lush and citrus flavoured 2017 Robert Weil Kiedricher German Riesling. The next dish of seared king scallops with samphire, capers and lemon butter was perfectly paired with an opulent 2016 Milton Riverpoint New Zealand Viognier. The main course of Gressingham duck breast and confit leg with red cabbage and orange jus was accompanied by a beautiful 2015 A to Z USA Pinot Noir, and the delicious banquet was completed perfectly with a dark chocolate mousse and ganache dessert with caramel ice cream, chocolate meringue, and cherry gel, paired with a a deliciously sweet and full-bodied 2017 Maury Lafage Grenat Frenchdessert wine.

The experience was arranged to inspire students in their final year of HND Professional Cookery, where they’ve spent the last four years working together, studying different styles of catering and developing their culinary skills to an advanced level. The talented attendees will put their training to the test following the event and have one week to write a report about the experience. All aspects of the lunch will be examined; from the meet and greet and ambience, to the creativity of the food and wine pairings.

Students were mentored and inspired by Gary Maclean, Executive Chef at Glasgow City College and former Masterchef: The Professionals winner and Scotland’s first National Chef. Our students will graduate and go on to work in restaurants of calibre, and I’m confident the experience at The Boat House will give them a taste of what their future could involve. Any of our budding chefs would be lucky to secure a position at any of Cameron House’s restaurants once the hotel reopens next year.”

Steven Smith, head chef at The Boat House, said: “It’s essential for our industry that we focus on developing the next generation of Scotland’s culinary talent. It’s been a pleasure to create a fine dining experience for City of Glasgow college’s talented chefs with my colleagues. What better way to motivate and inspire some of Scotland’s young chefs than reward them with a well-deserved feast.

Set on the banks of Loch Lomond, in Scotland’s first national park, the five-star resort is set to reopen the hotel in 2020 and will be recruiting 30+ talented chefs to join the workforce.
